Two posts in one day..WOW!

Yes, I never thought I would have time for this. I am guessing it will not happen that often, but I just had to comment on Target!

Wow, I mean I LOVE shopping there, and I love how they give back in so many ways.  But somethings just rubbed me the wrong way.  They never sold items that incorporated the true meaning of Holiday.  They are coming around...They even have some Steeler items once in blue moon!

Now they have a Target Debit Card.  Need I say more? No, but I will anyway.  It debits directly from your checking account AND you get the 5% off that Target credit card customers received. I saved $10 off my purchase today.  $10 that I would not have normally saved!  Couple that with the fact that you can use both a "Target" coupon and a MFR coupon on one item, I'd say we've got ourselves a score.

Just watch out for price hikes. I noticed that the Huggies soft pack of wipes, 64 count, was $2.39 there and at Giant Eagle has the same pack for $1.99.  There are $.50 off one 60 count pack of wipe coupons out there and with GE doubling coupons it's a way better deal at GE!

Happy Shopping!

Sunday Cooking...

Much to my husband's chagrin, I spent $200 at the grocery store yesterday. I am figuring it will last us two weeks. And I call that a win since most of my meats and items were organic. I save $15 dollars with coupons (not a great savings) and $15 with Giant Eagle's Fuel Perks.

Here is what I have made so far today:

Sweet and Sour Pot Roast - smells wonderful...I added carrots!

and

Taco Soup - I am not a Chili lover in the least bit, but this works well for my husband (who is) and my children! I, of course, love it!

Cheesy Chicken Enchiladas

One of my favorite "go to" recipes of ALL time.

Cheesy Chicken Enchilada's

Made with organic ingredients, of course.

Our meals this week...and the Organic Factor

I, like may others, usually try to plan my meals for the week.  And I USUALLY make all of them, but when the girls had this crazy four week cold, I admittedly bailed on a few nights of kitchen servitude.

I do LOVE to cook and I do LIKE to bake. I seemed to be baking more while everyone was sick (maybe I was willing my family better with the smell of cookies baking?) but I am now back on track this week.

Everything I list is Homemade unless I state "Store Bought" and Organic unless otherwise noted.

Last week included:
BBQ Sauce w/ Free Range Chicken Pieces, Coleslaw, Corn on the Cob
Edyta's Lasagna (new recipe for me) and Salad

So far this week:
Monday ~ Ground Turkey Taco's
Tuesday ~ Breakfast for Dinner (Bob's Mill Wholegrain Pancake Mix was awesome!)
Wednesday ~ Stuffed Cabbage, Mashed Potatoes and Salad
Thursday ~ Garlic Lemon Chicken Pasta and Salad

As you can see I am desperately trying for frugality, as well as, a basic YUM factor! :)

I have slowly worked my way up the Organic ladder over the past 4 years.  To think I just started with milk for myself and now we are at about 75% Organic in our household. Not to mention we just need to eat healthier. But my LORD is it tough and it can be expensive!  I fight that pull from the drive thru line every day for cheap and easy...and it isn't pretty.

It's taken me a LONG time to get to where I am right now; planning meals for the week, making sure they are healthy for family, shopping for them and carrying out the cooking process and it is some hard work! But when I see my 3 year old daughter eat the vegetables off her plate before the protein or the carbs, it makes me smile. Of course, after dinner we must have our "special treat"! :)

I am really hoping to update more often....that is if I am not cooking...
